Preparing the Dough

First things first, let’s prepare the pizza dough. In a mixing bowl, add 1 cup of all-purpose flour, 1 tsp of baking powder, 1/4 tsp of salt and 1 tbsp of sugar. Mix them well with a fork.

In another bowl, whisk together 1 egg, 2 tbsp of melted butter, and 3 tbsp of milk. Pour it over the flour mixture and stir until it forms a soft dough.

On a floured surface, roll your pizza dough into a thin crust. Aim for around 1/4 inch thickness. Transfer your rolled dough onto a baking sheet or pizza stone.

Making the Rhubarb Mixture

To make the rhubarb mixture, chop 3 cups of rhubarb stalks finely and toss them in a small bowl with 3/4 cup sugar. Let this sit while you prepare the other toppings.

If you’re feeling adventurous – try making a rhubarb chipotle goat cheese pizza! Toss in some chipotle peppers with your rhubarb and sprinkle goat cheese on top.

For those who love fruity flavors – you can try adding some rhubarb raspberry sauce for an extra tangy flavor. Simply mix 1 cup of raspberries with :one:, 1/4 cups of sugar and let it sit for 5-10 minutes before pouring it over the crust.

Baking the Rhubarb Pizza

To assemble your rhubarb pizza, spread your prepared pizza dough top evenly with the rhubarb mixture leaving about an inch crust around the edges. Sprinkle some goat cheese on top of your pizza and bake it for 15-20 minutes at 400°F (200°C).

For those who like savory flavors more than sweet ones, you can try making a mouth-watering rhubarb basil pizza. Toss freshly chopped basil with your rhubarb before placing them on top of your pizza.

Serve piping hot with some extra fresh basil leaves or pickled rhubarb on top as well as some apple honey BBQ sauce to dip your crusts!

With this recipe on hand, you’ll have an impressive and unique dish that’ll be perfect for family gatherings or even just to satisfy that craving for something sweet and tangy!

For this rhubarb pizza recipe, there are plenty of substitutions and variations you can make to personalize the dish to your liking. Here are some options:

– Toppings: While this recipe calls for a rhubarb chipotle goat cheese pizza, there are plenty of other toppings you can use. You could try a strawberry rhubarb BBQ sauce pizza or a savory rhubarb and basil pizza. The possibilities are endless.

– Dough: If you don’t have the time or ingredients to make homemade dough, you can always substitute with store-bought pizza dough or even a gluten-free option.

– Cheese: If goat cheese isn’t your thing, feel free to use any type of cheese that will complement the flavors in your chosen topping. Feta, mozzarella, or gouda would be great alternatives.

– Crust: If you want to keep things interesting, try experimenting with different types of crusts. A non-traditional fruit pizza crust made with almond flour and coconut oil could be an excellent variation.

– Rhubarb: One of the fun things about this recipe is that you can use different types of rhubarb depending on what’s available to you. Pickled rhubarb or roasted rhubarb could be delicious toppings for your pizza.

These are just a few variations you can try for this recipe. As you become more comfortable with making pizzas, don’t hesitate to make substitutions and experiment with various toppings!

A burst of tangy flavors in every bite

The rhubarb pizza recipe is a perfect summer treat that can be served alongside any refreshing drink of your choice. The flavors in this pizza are quite versatile, giving you the freedom to experiment with different pairing options.

You can enjoy this pizza as an appetizer or make it a full meal by pairing it with a salad or some grilled veggies. I suggest trying it with a bitter arugula and cucumber salad with a light balsamic vinaigrette, which pairs exceptionally well with the tangy flavor of the rhubarb.

Additionally, you can try pairing this pizza with some fruity cocktails, such as a strawberry rhubarb margarita or a spicy chipotle and rhubarb mojito. These drinks will add an extra zing to your meal and complement the flavors of the pizza.

If you’re looking for a more savoury option, I recommend adding some smoky toppings like bacon or even barbequed chicken. Drizzle on some apple honey barbeque sauce, and you’ll have a perfectly balanced sweet and savoury meal.

For dessert, try serving the pizza with some ruby red rhubarb sorbet or a scoop of vanilla ice cream. This combination makes for an irresistible end to your meal.

No matter what you choose to serve the rhubarb pizza recipe with, it will surely impress your guests and leave them wanting more!

Make-Ahead, Storing and Reheating

Perfect for pizza night with a twist

One of the coolest things about this Rhubarb Pizza Recipe is that you can prepare it in advance and heat it up for later consumption. This recipe allows you to customize it as per your preference and taste.

To make ahead, you can prepare the dough in advance and store it in an airtight container or freeze it for later use. Likewise, you can also pickle the rhubarb in advance and refrigerate until ready to use.

If you want to store any leftover pizza, place it in the refrigerator for up to three days. To reheat, simply place in the oven at 350°F (175°C) for around five minutes or until heated through.

Additionally, if you want to freeze any leftover pizza, make sure to wrap it tightly with a plastic wrap or aluminum foil before doing so. It should be good for up to two months. When reheating, let thaw in the refrigerator overnight and bake at 350°F (175°C) for around 10-15 minutes or until heated through.

Bear in mind that while reheated pizza still tastes delicious, it may not have the same crispy crust as fresh out of the oven. Nevertheless, this recipe is still worth trying and an excellent way to maximize your leftover rhubarb chipotle goat cheese pizza without wasting any food!

Tips for Perfect Results

To create the perfect rhubarb pizza, there are a few tips and tricks to keep in mind. Here are my recommendations for achieving the best results possible.

Firstly, when it comes to the pizza dough, make sure it’s fresh and rested before using. The dough should be rolled out to a thickness of around 1/4 inch and left to sit for about ten minutes before adding toppings. This allows the gluten to relax, making the crust far more tender and easier to work with.

Secondly, if you’re looking for a sweeter option, try sprinkling sugar over the crust before adding any toppings. This will create a sweet and crunchy base that complements the tartness of the rhubarb perfectly.

Thirdly, it’s important to note that rhubarb has quite a high water content. To avoid ending up with a soggy pizza, consider roasting or grilling the rhubarb before adding it to the pizza. This will remove some of the excess moisture and intensify its flavor.

Fourthly, when placing the toppings on your pizza, leave at least one inch of crust around the edges. You don’t want all of your ingredients sliding off when you pick up a slice. This will also create a lovely border around your pizza.

Fifthly, I recommend using goat cheese as part of your topping combination – this tangy cheese pairs wonderfully with rhubarb’s sourness. Additionally, raspberry or strawberry would make great additions alongside or instead of rhubarb.

Lastly, if you’re feeling particularly adventurous, try incorporating some savory rhubarb recipes into your pizza! A rhubarb chutney or rhubarb chipotle goat cheese pizza can make for unique and delicious flavor combinations.

By following these tips and customizing them to suit your preferences, you’ll be able to create that perfect rhubarb pizza every time.

Rhubarb Pizza Recipe

I have had this recipe since I was in high school in the 70's. My art teacher gave it to me and I've been making it every spring since. My kids love it. Didn't find anything quite like it on Zaar yet, so I decided to submit it. It's an easy and fun dessert, because it looks like a cheese pizza, but tastes like a strawberry-rhubarb treat!
