Ingredient List
Here are the ingredients needed to make Henna’s Low Carb Meatloaf Recipe:
- 1 lb ground beef
- 1 lb ground pork
- 1 lb ground chicken
- 1 lb ground turkey
- 1 lb ground lamb
- 1 envelope soup mix
- 2 eggs
- 1/4 cup of almond flour or crushed pork rinds
- 2 teaspoons of carb roman seasoning (optional)
- 1/2 cup of finely chopped onion
- 1/2 cup of finely chopped mushroom
Note that this recipe requires a mix of different meats; if you can’t find all five varieties in your local store, feel free to use what you can find. The soup mix is essential for adding flavor and helping to bind the meat, but if you don’t have it or don’t want to use it, I suggest using a tablespoon of soy sauce (or coconut aminos) instead. Finally, feel free to adjust the amount of almond flour or pork rinds based on your preference and dietary needs.

Substitutions and Variations
Looking for ways to make this low carb meatloaf recipe your own? There are a few substitutions and variations you can try that will still result in a delicious and satisfying dish.
First of all, if you’re not a fan of mushrooms or onions, feel free to omit them from the recipe. You can always add in other veggies that you enjoy, such as diced bell peppers or shredded carrots. Just keep in mind that adding too many vegetables could affect the texture of your meatloaf.
Additionally, you can swap out the ground beef for other ground meats. Ground lamb, turkey, chicken, or pork would all work well in this recipe. You could even make a combination of two or more meats to add some extra flavor complexity. Just be sure to adjust the cooking time accordingly depending on which meat(s) you choose.
For those following a keto diet or looking for an even lower carb option, try using almond flour instead of pork rinds. It will provide a similar binding agent without the additional carbs.
You can also experiment with different flavors by swapping out the envelope of soup mix for different seasonings or spices. Try adding a teaspoon of smoked paprika or cumin for some extra depth of flavor.
Ultimately, this low carb meatloaf recipe is highly customizable, so don’t be afraid to get creative with your substitutions and variations. Just keep in mind that some ingredients may change the nutritional content of the dish, so be sure to adjust accordingly if necessary.
Serving and Pairing
Once your low-carb meatloaf is hot and ready, it’s time to decide how you’d like to serve it. I recommend slicing the meatloaf in thick pieces and placing them on a bed of fresh green veggies, such as sautéed spinach or broccoli florets. You could also opt for some roasted carrots or cauliflower rice if you prefer something more substantial.
For those who prefer a saucier meal, try adding a dollop of homemade tomato sauce or creamy mushroom gravy on top of your sliced meatloaf. The gravies will help to lock in the moisture and flavor of the dish, making each bite juicier and satisfying.
Pairing the meatloaf with a nice salad on the side makes for a well-rounded keto meal any day of the week. A simple house salad of mixed greens lightly dressed with olive oil, balsamic vinegar, and salt does wonders for taming down the richness of the meatloaf.
If you’re looking for something more tangy and refreshing, try adding some pickled onions or cucumber slices to your salad. It adds an extra layer of flavors that perfectly complements the rich flavors of the dish.
No matter how you decide to serve it up, this low-carb meatloaf will be a great main dish for dinner menu with friends or family. Plus, it’s easy to prepare ahead of time and reheat for later meals throughout the week.
Make-Ahead, Storing and Reheating
Once you’ve made my Henna’s Low Carb Meatloaf Recipe, you’ll be happy to know that it stores well for later consumption. Even better, you can prepare this dish ahead of time and reheat it when needed.
To prepare in advance, mix your ingredients together as directed and place the mixture into a loaf pan. Cover with aluminum foil or plastic wrap and refrigerate until ready to cook. You can refrigerate your meatloaf up to 24 hours before cooking.
If you want to store your leftover meatloaf, allow it to cool down completely before placing it in an airtight container. Refrigerate any leftovers promptly and consume within 3-4 days.
When it comes to reheating this recipe, I recommend slicing your meatloaf into individual portions as it makes reheating easier. You can either warm them up in the microwave or in the oven. To microwave, place a portion on a microwave-safe plate and heat for 1-2 minutes or until heated through. To reheat in the oven, preheat your oven to 350°F/180°C and bake your slices of meatloaf for 10-15 minutes or until heated thoroughly.
This recipe also freezes well. If you want to freeze any leftover meatloaf, wrap individual portions tightly with aluminum foil and place them in a freezer-safe container. Label and date the containers, so you know how long they’ve been stored. Your frozen low carb meatloaf will stay fresh for up to three months.
Having leftovers or making meals ahead of time has never been this easy with Henna’s Low Carb Meatloaf Recipe!
Tips for Perfect Results
As a culinary explorer, I have come across many meatloaf recipes, and I can safely say that Henna’s Low Carb Meatloaf recipe is one-of-a-kind. Here are some tips that will help you achieve the best results when preparing this dish.
1. Use Fresh Ingredients
The first tip to keep in mind is to use fresh ingredients. Whether it’s the ground meat, mushrooms, onions, or any other ingredient used in the recipe, ensure they are fresh before using them. Fresh ingredients not only taste better, but they also help to bring out the flavors of other ingredients in the recipe.
2. Soak Pork Rind Crumbs in Liquid
If you don’t have almond flour on hand and opt for a low-carb option instead of breadcrumbs, pork rinds can be used as a substitute. However, it’s crucial to soak them in liquid first to prevent dryness in the meatloaf. Simply combine them with some milk or heavy cream and mix well before adding to your meat mixture.
3. Don’t Overwork Your Ground Meat Mixture
It’s essential not to overwork your ground meat mixture. When mixing your ingredients together and forming your loaf, avoid handling it too much as this would result in tough meatloaf. Be gentle when mixing all ingredients and form your loaf gently.
4. Add Moisture if Necessary
If you find that your meatloaf is dry upon taking it out of the oven, add some broth on top of it or drizzle some gravy. This helps to add moisture to the already cooked dish and makes it more appetizing.
5. Let It Rest Before Slicing
Once your meatloaf is out of the oven, let it rest for at least 10 minutes before slicing it up. This allows juices to redistribute throughout the loaf making it more flavorful.
By following these tips, you’ll be sure to end up with a delicious homemade meatloaf that will become a staple addition to your keto dinner menu!
